Chocolate and Cinnamon Folds

If you fancy a change to Cinnamon Buns or just love chocolate and cinnamon you should give a Chocolate and Cinnamon Fold a try. They use the same dough mix, you just need to half the filling recipe.

Chocolate and Cinnamon Folds

They tear apart and ooze chocolatey cinnamon goodness everywhere. You can make the dough on day or the night before and for shear ease a stand mixer helps.

I’ve found that by making them in a muffin tray you get a nice rise in the middle of the bun too.

Ingredients – makes 12.

Dough

  • 100g butter
  • 200ml milk
  • 1 tsp salt
  • 500g bread flour
  • 2 eggs
  • 1 tsp cardamom (10 pods)
  • 4 tbsp (35g) caster sugar

Filling

  • 3 tbsp chocolate spread red q
  • 1 tbsp cinnamon

Topping

  • 35g caster sugar and 1 tbsp cinnamon mixed together.
  • An egg

You’ll also need a muffin tin with 12 holes.

To make

  • Melt the butter, milk and salt in a sauce pan over a medium heat. Don’t allow to boil. Once melted allow to cool until it’s lukewarm.
  • Smash open the cardamom pods and get the seeds out the middle
  • If using a mixer put the flour, cardamom, sugar, eggs, yeast and milk in bowl and put the mixer on low until combined, then turn up a notch and mix for 5 minutes.
  • If making by hand put the flour, cardamom, sugar, eggs, yeast and half the milk in bowl. Mix together with a spoon or fork until it’s combined and then add the remaining milk.
  • Then turn out onto a floured surface and kneed for 5 minutes.
  • Put make in the bowl and cover with cling film or a shower cap. Leave to rise for 2 hours or overnight.
  • Grease a muffin tray with butter.

To make the buns

  • Grease a muffin tray with butter.
  • Put the oven on at 180c
  • Empty the dough out onto a floured surface.
  • Knock the air out of the dough and then roll out into a square about 40cm on each side.
  • Then using a spatula spread the chocolate spread all over the dough, then sprinkle with cinnamon.

To fold

  • Fold the dough into three, bringing both edges in and on top of each other.
  • Then fold into three again.
  • Give a slight press down and then cut into 12 equal pieces.
  • Place each piece into one of the muffin holes, with the folded edges facing up.
  • Beat the egg and brush on each roll.
  • Sprinkle with the cinnamon sugar.

Then bake for 12 minutes.

Eat warm, with a strong coffee, cup of tea or some hot chocolate.
