Halloumi Burgers

Another take on halloumi fries, great as a Friday lunchtime treat or to replace your normal beef burger.

Crisp and soft – I serve mine in a brioche bun, with some roasted garlic and mint yogurt, grilled peppers and chilli jam.

All you need is:

Ingredients – serves 2

  • A block of halloumi
  • 2 tbsp plain flour
  • 2 tsp of harissa or paprika
  • Vegetable oil
  • 2 brioche buns
  • Half a yellow or orange pepper
  • I garlic clove
  • 2 tbsp greek yogurt
  • About 4 mint leaves
  • 2 tsp chill jam

They need about 5 minutes to cook and must be served hot.

Cooking

  • Slice the halloumi into three, pick the two best burgers and slice the other piece into fries for extra halloumi treats
  • Mix the flour and spices
  • Add the halloumi and coat in flour and put to one side.
  • Now prep everything else, as the halloumi needs to be eaten hot.

  • Heat a heavy frying pan or grill pan, then slice the pepper and add to the pan. Put a drop of oil in a corner and add the garlic clove (still in its skin). Turn everything when it starts to brown.
  • Meanwhile chop the mint leaves and put in a small bowl or ramekin with the yogurt.
  • When the garlic and peppers are cooked remove from the pan and squeeze the garlic out it’s skin into the yogurt.
  • Toast the buns on the inside only and place on a board to make the burgers.

  • Now add enough oil to cover the base of a frying pan, about 1cm deep and heat.
  • Add a small piece of halloumi to check it’s hot enough. It should bubble and cackle when it hits the oil.
  • Then cook the halloumi in batches if needed , so there’s a single layer in the pan.
  • They need about 2 mins on each side, turn when golden.
  • While the halloumi is cooking start building your burgers:
  • Spread chilli jam on the bottom half of the bun and top with a layer of peppers. Then spread yogurt on the top.
  • Once the halloumi is cooked remove and place on kitchen towel to drain
  • Then place in your burgers and tuck in
