When we’ve had Pulled Pork over the weekend, I used to have plenty of pork leftover for sandwiches. However my kid’s appetites seem to have grown exponentially the last few months and my hope of pork quickly diminished in front of my eyes.

I always serve the pork with homemade baked beans and baked potatoes (white and sweet). I manage to completely over estimate the number of potatoes. I’d also made a vat of beans, so there was still lunchtime opportunities.

I had some small terracotta dishes that I’d bought from the lovely cooking section of Salt and Pepper in Monmouth, while we were on holiday. Though they were bought with the idea of making Baked eggs, they were perfect for individual pies too.

I simply chopped up the potatoes and then roughly mashed then up with a tablespoon of olive oil. Then put a layer of beans, covered with grated cheddar and then gently pressed the potato on top.

Bake for 25 minutes uncovered until crispy. Eat with a spoon and some ketchup for pure decadence.
