Roasted Spiced Sweet Potatoes

Sweet potatoes are such a great and versatile ingredient. I use them as fries, in curries, in chillis, the list goes on.

I make these Roasted Spiced Sweet Potatoes to go alongside Bacon chilli and flour tortillas for Wednesday Night Tacos.

They’re simple to make, just mix the ingredients in a roasting tin, put in the oven, turn halfway and then eat.

Cooking time, 40 mins

Ingredients

3 Sweet Potatoes, cubed
1 green pepper, sliced
1 red onion, halved and sliced
3 garlic cloves, whole
1/2 tsp chipotle chillis
1 tsp smoked paprika
1/2 tsp allspice
1/2 tsp oregano
2 tbsp rapeseed oil

Equipment
1 roasting dish

Method
Put the oven on 220
Put oil and the herbs and spices in the tray and mix together
Add all the other ingredients and combine
Put in the oven on a middle shelf and turn the heat down to 180
Leave for 20 mins, then loosen and flip everything over as best you can.
Put back in the oven and leave for another 20 mins
Then serve.
